2008 Blanc de Noirs
This extremely limited wine blends Pinot Noir and Pinot Meunier grapes exclusively. Of a pale pink color, this sparkling wine opens with aromas of red cherry, wild berry, and floral blossom. Aged for 33 months on the lees, this wine is all about the fruit. Flavors of black raspberry and roasted nutty characters add to its volume and length. It's well balanced acidity, persistence on the palate, and fine effervesce results in the highest level of elegance and finesse.
Food Pairing: This fruit forward wine makes a great pairing with full flavored foods. For a pairing with cheese, try strong cheeses like an aged gouda, parmesan, or cheddar.
